Date Chicken

Serves 2

  • 3-4 bone in chicken thighs
  • 3 oz soy sauce
  • 2 tbsp + 2 tsp Date syrup
  • 8 cloves garlic, smashes
  • 1 red onion, sliced
  • 1 pinch cayenne
  • black pepper
  • 1 c stock
  • 1 tbsp brandy

Preheat oven to 450. In a skillet, caramelize red onion and garlic together until deep in color. Add brandy to deglaze the pan. Place onion on bottom of casserole dish. Place chicken on onion mixture. Whisk together soy sauce, date setup, chicken stock and cayenne pepper. Pour over chicken. Cover and cook for 60 minutes. Remove cover and cook for another 30.

Note: If using chicken with skin on, sear chicken, skin side down after cooking the onions. Place sauce into casserole and bake uncovered for 30 minutes. Do not let the juices dry out. you wan the sauce to be thick and reduced.
