Date Chicken

Serves 2

  • 3-4 bone in chicken thighs
  • 3 oz soy sauce
  • 2 tbsp + 2 tsp Date syrup
  • 8 cloves garlic, smashes
  • 1 red onion, sliced
  • 1 pinch cayenne
  • black pepper
  • 1 c stock
  • 1 tbsp brandy

Preheat oven to 450. In a skillet, caramelize red onion and garlic together until deep in color. Add brandy to deglaze the pan. Place onion on bottom of casserole dish. Place chicken on onion mixture. Whisk together soy sauce, date setup, chicken stock and cayenne pepper. Pour over chicken. Cover and cook for 60 minutes. Remove cover and cook for another 30.

Note: If using chicken with skin on, sear chicken, skin side down after cooking the onions. Place sauce into casserole and bake uncovered for 30 minutes. Do not let the juices dry out. you wan the sauce to be thick and reduced.

Vietnamese Lemongrass Ginger Chicken or Tofu Noodle Bowl

Serves 4

  • 16 oz chicken breast or sprouted firm tofu
  • 2 tbsp coconut oil
  • 4 cloves garlic
  • 4 green onions
  • 1 lg carrot, finely julienne
  • 1 Persian cucumber, finely julienne
  • 1 jalapeno, thinly sliced
  • 12g ginger
  • 3 stalks lemongrass
  • 1 tsp salt
  • 1 tsp chili powder
  • 1/3c fish sauce
  • 1 tbsp coconut sugar
  • 1 cup water
  • 1 c cilantro leaves

Vegetables

  1. Julienne and set aside carrots, cucumber, jalapeno
  2. Chop cilantro, set aside
  3. Separate whites and greens of green onions and thinly slice the greens, dice the whites

Chicken or Tofu

  1. Chicken: Rinse, pat dry, cut into bite-sized pieces. Tofu: Rinse, pat dry, cut into 1″ cubes.
  2. Heat oil in a large skillet over medium heat. Add garlic, white parts of onions and saute until just soft. Add in salt, chili powder, ginger and lemongrass. Saute until fragrant.
  3. Toss in chicken or tofu; cook until golden brown on all sides. Add fish sauce, coconut sugar and water. Cook, uncovered, until chicken is tender.
  4. Serve over Brown Rice Noodles.
  5. Top with even amounts of carrot, cucumber, jalapeno, green onion tops and cilantro.
  6. Service with fish sauce on the side if desired.
